- 1 pound chicken breast, cubed
- 1 medium sweet potato, diced
- 1 cup mini bell peppers, sliced
- 1 red onion, chopped
- 1 tablespoon olive oil
- 1 teaspoon chili powder, 1/2 teaspoon cumin, 1/2 teaspoon smoked paprika, salt
- Salsa + Greek yogurt (optional)
- Mix all ingredients on a sheet pan.
- Roast 25-30 min at 425°F, flipping halfway.
- Top with a spoonful of salsa or Greek yogurt before serving.
