Healthy 7 Layer Taco Dip

It’s Coach Amie back with Forking Made Easy: a collection of recipes to make eating healthy taste good. This week’s menu features [lightened up] 7-Layer Taco Dip – full recipe is posted below:

SEVEN LAYER TACO DIP

  • 1 can refried beans

  • 2 cups plain Greek yogurt

  • Taco Seasoning (see homemade version below)

  • 2 medium avocados

  • ¼ cup cilantro, chopped

  • ½ lime, juiced

  • sea salt, to taste

  • 3 cups iceberg lettuce, finely chopped

  • ½-1 cup shredded cheese (Mexican or cheddar)

  • 2 cups Roma tomatoes, chopped

  • 1 cup red onion, chopped

Homemade Taco Seasoning

  • 2 teaspoons chili powder

  • 2 teaspoons cumin

  • 1 teaspoon garlic powder

  • 1 teaspoon smoked paprika

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ⅛ teaspoon cayenne pepper (optional)

  1. Spread refried beans on the bottom of a 9×9 pan.

  2. In a mixing bowl, combine Greek yogurt and taco seasoning. Spread yogurt mixture over the top of the refried beans.

  3. In a large bowl, mash avocados. Add cilantro, lime juice, and salt. Mix well and spread on top of the yogurt layer.

  4. Add chopped lettuce, shredded cheese, tomatoes, and red onion.

  5. Refrigerate for several hours before serving.

  6. Serve with tortilla chips or fresh-cut veggies.
