Rotisserie Chicken Farro Salad

(makes one serving)
  • 4 ounces cooked rotisserie chicken, shredded
  • 1/2 cup cooked farro (cold)
  • 1 cup arugula
  • 1/2 cup shredded carrots
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
Toss all ingredients together in a large bowl and mix well to combine.  Enjoy!
