(makes one serving)
- 4 ounces cooked rotisserie chicken, shredded
- 1/2 cup cooked farro (cold)
- 1 cup arugula
- 1/2 cup shredded carrots
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
Toss all ingredients together in a large bowl and mix well to combine. Enjoy!
