Rainbow Fruit Salad with Citrus-Mint Dressing

(makes 4-6 servings)
  • 1 cup strawberries, halved
  • 1 cup blueberries
  • 1 cup kiwi, peeled and chopped
  • 1 cup pineapple, chopped
  • 1 cup grapes, halved
  • 1 orange, segmented or chopped
Citrus-Mint Dressing:
  • 2 tablespoons fresh orange juice
  • 1 tablespoon lime juice
  • 1 teaspoon honey or maple syrup
  • 1 tablespoon fresh mint, finely chopped
  • pinch of sea salt to enhance sweetness
  1. In a large bowl, combine all the chopped fruit.
  2. In a small bowl, whisk together the citrus juices, mint, honey, and salt.
  3. Pour the dressing over the fruit and gently toss to coat.
  4. Chill for 15–30 minutes if desired, or serve immediately.
