Pumpkin Protein Oatmeal Bake

(makes 4 servings)
  • 2 cups rolled oats
  • 1 cup pumpkin purée (unsweetened)
  • 2 scoops vanilla protein powder
  • 2 large eggs
  • 1 ½ cups unsweetened almond milk (or milk of choice)
  • 1–2 tablespoons maple syrup (or sweetener of choice, optional for taste
  1. Preheat oven to 350°F.
  2. In a bowl, mix pumpkin, eggs, almond milk, protein powder, and maple syrup until smooth.
  3. Stir in oats until well combined.
  4. Pour into a greased 8×8 baking dish.
  5. Bake for 30–35 minutes, until set and golden on top.
  6. Cool slightly, slice, and enjoy warm or cold.
  7. Enjoy!
