Protein-Packed Pumpkin Cheesecake

(makes 1 serving)

  • 1 cup cottage cheese

  • 1/2 cup canned pumpkin puree

  • 1/8 teaspoon pumpkin pie spice

  • 1-2 tablespoons pure maple syrup

  • 1-2 tablespoons chopped walnuts or almonds, optional

  • cinnamon

  1. Place cottage cheese, pumpkin puree, pumpkin pie spice, and maple syrup in a blender.

  2. Pulse until a creamy consistency.

  3. Pour into a bowl and place in the refrigerator covered for 2-3 hours.

  4. When ready to eat, sprinkle with cinnamon and top with chopped nuts.
