Protein-Packed Pumpkin Cheesecake
(makes 1 serving)

1 cup cottage cheese

1/2 cup canned pumpkin puree

1/8 teaspoon pumpkin pie spice

1-2 tablespoons pure maple syrup

1-2 tablespoons chopped walnuts or almonds, optional

cinnamon

Place cottage cheese, pumpkin puree, pumpkin pie spice, and maple syrup in a blender.

Pulse until a creamy consistency.

Pour into a bowl and place in the refrigerator covered for 2-3 hours.

When ready to eat, sprinkle with cinnamon and top with chopped nuts.
