Protein-Packed Tomato Soup

(makes 2 servings)
  • 1 15-oz. can fire-roasted diced tomatoes
  • 1 1/4 cup cottage cheese
  • 2/3 cup roasted red pepper
  • 2 teaspoons minced garlic
  • 3-4 leaves fresh basil
  • salt and pepper, to taste
Add all ingredients to a blender and pulse until smooth. Heat in the microwave or on the stovetop. Enjoy!
