Seared Pork Chops & Baked Apples

Seared Pork Chops with Cinnamon Apple Topping

(makes 2 servings)

  • 2 boneless pork chops (about 4–6 oz each)
  • 1 large apple (Honeycrisp or Fuji), peeled and diced
  • 1 teaspoon cinnamon
  • 1 tablespoon olive oil or avocado oil
  • 1/2 teaspoon fresh or dried thyme
  • salt and pepper, to taste
  1. Heat oil in a skillet over medium-high heat. Season pork chops with salt and pepper.
  2. Sear pork chops for 4–5 minutes per side, until cooked through (internal temp 145°F).
  3. Remove from the skillet and let rest.
  4. In the same skillet, add diced apple, cinnamon, and thyme.
  5. Sauté for 3–4 minutes, until apples are tender but still slightly crisp.
  6. Spoon the warm apple mixture over the pork chops and serve.
  7. Enjoy!
