- 2 boneless pork chops (about 4–6 oz each)
- 1 large apple (Honeycrisp or Fuji), peeled and diced
- 1 teaspoon cinnamon
- 1 tablespoon olive oil or avocado oil
- 1/2 teaspoon fresh or dried thyme
- salt and pepper, to taste
- Heat oil in a skillet over medium-high heat. Season pork chops with salt and pepper.
- Sear pork chops for 4–5 minutes per side, until cooked through (internal temp 145°F).
- Remove from the skillet and let rest.
- In the same skillet, add diced apple, cinnamon, and thyme.
- Sauté for 3–4 minutes, until apples are tender but still slightly crisp.
- Spoon the warm apple mixture over the pork chops and serve.
