No-Bake Breakfast Cookies

Ingredients: Here’s What You Need

(Makes 10-12 cookies)

  • 1 cup creamy nut butter of choice (almond, peanut, cashew, etc.)

  • 1/4-1/3 cup honey

  • 1 teaspoon vanilla

  • 3 tablespoons chia seeds

  • 1 cup old-fashioned oats

  • Optional mix-ins such as chopped nuts, dried fruit, seeds, protein powder, etc.

Recipe: Follow these steps

  1. Place nut butter, honey, and vanilla in a microwave-safe bowl and microwave for 20 seconds. If needed, add a bit more honey to ensure a very creamy consistency. Stir until well combined.

  2. Pour mixture into a large mixing bowl and combine with remaining ingredients and any additional mix-ins you choose. Once mixed, this should form a dough-like texture. If the mixture is too dry, add a bit more honey. If the mixture is too runny, add a bit more oats to achieve the desired consistency.

  3. Roll the mixture into 10-12 balls and place on a baking sheet lined with parchment paper. Slightly flatten balls with the bottom of a glass. Place cookies into the fridge for 3-4 hours and allow them to set.

  4. Store in a sealed container in the fridge for several days.
