MEDITERRANEAN FRIED RICE


It’s Coach Amie back with Forking Made Easy: a collection of easy-to-follow recipes to make eating healthy taste good. This week’s menu features Mediterranean Fried Rise – full recipe posted below.


(makes 4 servings)

  • 1 tablespoon olive oil

  • ¼ cup red onion, diced

  • 2 cloves garlic, minced

  • 2 cups cooked brown rice

  • 2 Roma tomatoes, diced

  • 2 cups fresh spinach, chopped

  • ½ cup crumbled feta cheese

  • 3 cups rotisserie chicken, chopped

  1. In a skillet, heat olive oil and saute’ onion, garlic, and tomatoes for 2 minutes.

  2. Add rice, spinach and chicken; cook until warmed through.

  3. Top with feta cheese and serve.
