Mediterranean Fried Rise
(makes 4 servings)

1 tablespoon olive oil

¼ cup red onion, diced

2 cloves garlic, minced

2 cups cooked brown rice

2 Roma tomatoes, diced

2 cups fresh spinach, chopped

½ cup crumbled feta cheese

3 cups rotisserie chicken, chopped

In a skillet, heat olive oil and saute’ onion, garlic, and tomatoes for 2 minutes.

Add rice, spinach and chicken; cook until warmed through.

Top with feta cheese and serve.
