(makes 1-2 servings)
- 1 cup cooked lentils
- 1/4 cup cucumber, diced
- 1/4 cup cherry tomatoes, halved
- 1 tablespoon red onion, finely chopped
- 2 tablespoons hummus
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 tablespoon hemp seeds
- salt & pepper to taste
- Combine lentils, cucumber, tomatoes, and red onion in a bowl.
- Mix in hummus, olive oil, lemon juice, and hemp seeds.
- Season with salt & pepper. Enjoy as a salad or in lettuce wraps!
