Mediterranean Lentil Salad

(makes 1-2 servings)
  • 1 cup cooked lentils
  • 1/4 cup cucumber, diced
  • 1/4 cup cherry tomatoes, halved
  • 1 tablespoon red onion, finely chopped
  • 2 tablespoons hummus
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon hemp seeds
  • salt & pepper to taste
  1. Combine lentils, cucumber, tomatoes, and red onion in a bowl.
  2. Mix in hummus, olive oil, lemon juice, and hemp seeds.
  3. Season with salt & pepper. Enjoy as a salad or in lettuce wraps!
