Mason Jar Salads


It’s Coach Amie back with Forking Made Easy – this week’s recipe: Mason Jar Salad

Ingredients: Here’s What You Need

(Makes 1 serving)

Salad Ingredients

  • 2 cups mixed greens

  • 1/2 cup cherry tomatoes, halved

  • 2 Tablespoons red onion, diced

  • 1/2 cup cooked quinoa

  • 4 ounces cooked chicken breast, diced

Dressing Ingredients

  • 1 Tablespoon olive oil

  • 2 teaspoons apple cider vinegar

  • 1 teaspoon Dijon mustard

  • 1 teaspoon garlic, minced

  • 1 teaspoon tahini

Recipe: Follow these steps

  1. In a small bowl, whisk all dressing ingredients and set aside.

  2. Place dressing in the bottom of a 32-ounce wide-mouth mason jar.

  3. Next, layer the remaining ingredients in the following order:

    • Tomatoes

    • Red Onion

    • Quinoa

    • Chicken

    • Mixed Greens

  4. Seal tightly with lid and store in the fridge for up to several days.
