Lemon Garlic Edamame

(makes 4 servings)
  • 2 cups shelled edamame (cooked or thawed) 
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  1. In a skillet over medium heat, warm the olive oil.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Toss in the edamame and stir to coat evenly with the garlic oil. Cook for 2-3 minutes until heated through.
  4. Remove from heat, drizzle with lemon juice, and toss again.
  5. Season with a pinch of salt or pepper if desired and serve warm.
  6. Enjoy!
