(makes 4 servings)
- 2 cups shelled edamame (cooked or thawed)
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- In a skillet over medium heat, warm the olive oil.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Toss in the edamame and stir to coat evenly with the garlic oil. Cook for 2-3 minutes until heated through.
- Remove from heat, drizzle with lemon juice, and toss again.
- Season with a pinch of salt or pepper if desired and serve warm.
