Quick and Easy Hummus Bowls
(makes 1 serving)

2-4 tablespoons of your favorite hummus

1 cup diced chicken or tofu

1 small cucumber, sliced

2 tablespoons red onion, diced

1/2 cup cherry tomatoes, halved

1/4 cup Kalamata olives, optional

2 tablespoons feta cheese, crumbled

2-3 cups mixed greens

1/2 cup pre-cooked brown rice or quinoa

Place mixed greens in a large bowl. Top with remaining ingredients and enjoy!
