GRILLED VEGGIES & GNOCCHI SALAD

This is not your typical salad but will soon become a family favorite. You might think of pasta as being a heavier fall/winter dish but this lightened up version is perfect for summer. Plus, it’s a super delicious and even better excuse to bust out the grill.

GRILLED VEGGIES & GNOCCHI SALAD

Ingredients: Here’s What You Need

  • 1 16-ounce package of whole wheat gnocchi

  • 1 medium zucchini, sliced and halved

  • 1 medium yellow squash, sliced and halved

  • 1 medium red onion, cut into large chunks

  • 1 bunch of asparagus, chopped

  • 2 tablespoons olive oil

  • 2 tablespoons balsamic vinegar

  • 2 tablespoons fresh basil, chopped

  • 3 cloves garlic, minced

  • ½ cup grated parmesan

  • salt and pepper, to taste

Recipe: Follow These Step

  • In a well-oiled grill pan, grill veggies until slightly charred yet still a bit crunchy.

  • Cook gnocchi according to package directions and drain. Set aside.

  • In a small bowl, whisk together olive oil, balsamic vinegar, basil, garlic, salt, and pepper.

  • Add gnocchi and grilled vegetables to a large bowl. Pour dressing over veggies and gnocchi and toss to coat. Serve topped with cheese.
