Grilled Stuffed Portobellos

(makes 4 servings)

  • 4 large portobello mushrooms
  • 1 pound lean ground beef or turkey
  • 2 cups spinach, chopped
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan
  • olive oil
  • salt and pepper, to taste
  1. Preheat grill to medium heat.
  2. Gently remove the stems from the portobello mushrooms and wipe the top and bottom with a damp paper towel to remove any dirt.
  3. In a medium skillet, cook ground meat and garlic until browned. Stir in spinach until wilted. Remove the skillet from heat and mix in the Parmesan cheese.
  4. Brush mushrooms with olive oil and sprinkle with salt and pepper.
  5. Fill each mushroom cap evenly with ground meat mixture.
  6. Grill 10-12 minutes until mushrooms are tender and heated through.
  7. Enjoy!
