Grilled Pineapple with Lime & Chili

 (makes 4 servings)

  • 1 ripe pineapple, peeled, cored, and cut into rings or spears
  • 1 tablespoon lime juice (fresh)
  • 1 teaspoon lime zest
  • 1/2 teaspoon chili powder (adjust to taste)
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon olive oil
  • pinch of sea salt
  1. Preheat your grill (or grill pan) to medium-high heat.
  2. In a small bowl, mix together lime juice, lime zest, chili powder, smoked paprika (if using), salt, and oil.
  3. Brush or drizzle the lime-chili mixture over both sides of the pineapple slices.
  4. Grill pineapple for 3–4 minutes per side until grill marks appear and the fruit caramelizes slightly.
  5. Serve warm or chilled, with an extra squeeze of lime if desired.

Serving Suggestions:

  • On its own as a light dessert
  • Topped with chopped mint or toasted coconut flakes
  • Chopped and added to tacos or summer salads
  • Alongside grilled chicken or shrimp for a tropical twist
