- 1 ripe pineapple, peeled, cored, and cut into rings or spears
- 1 tablespoon lime juice (fresh)
- 1 teaspoon lime zest
- 1/2 teaspoon chili powder (adjust to taste)
- 1/2 teaspoon smoked paprika
- 1 teaspoon olive oil
- pinch of sea salt
- Preheat your grill (or grill pan) to medium-high heat.
- In a small bowl, mix together lime juice, lime zest, chili powder, smoked paprika (if using), salt, and oil.
- Brush or drizzle the lime-chili mixture over both sides of the pineapple slices.
- Grill pineapple for 3–4 minutes per side until grill marks appear and the fruit caramelizes slightly.
- Serve warm or chilled, with an extra squeeze of lime if desired.
