Greek Meatball Lettuce Cups

(makes 4 servings)

  • 1 pound ground beef or turkey
  • 1 egg
  • 1 teaspoon oregano
  • 2 tablespoons parsley, chopped
  • 2 teaspoons garlic powder
  • salt and pepper, to taste
  • 8-10 butter lettuce leaves
  • 1 small cucumber, diced
  • 1 tomato, diced
  • 1/2 cup plain Greek yogurt
  1. Preheat oven to 400°F.
  2. In a large mixing bowl, combine beef or turkey, egg, oregano, parsley, salt, and pepper. Form into 1-inch meatballs.
  3. Bake meatballs on a baking sheet for 18–20 minutes or until cooked through.
  4. In a small mixing bowl, combine Greek yogurt, cucumber, tomato, and garlic powder.
  5. Once cooked through, place meatballs in lettuce cups and top with yogurt mixture.
  6. Enjoy!
