(makes 4 servings)
- 1 pound ground beef or turkey
- 1 egg
- 1 teaspoon oregano
- 2 tablespoons parsley, chopped
- 2 teaspoons garlic powder
- salt and pepper, to taste
- 8-10 butter lettuce leaves
- 1 small cucumber, diced
- 1 tomato, diced
- 1/2 cup plain Greek yogurt
- Preheat oven to 400°F.
- In a large mixing bowl, combine beef or turkey, egg, oregano, parsley, salt, and pepper. Form into 1-inch meatballs.
- Bake meatballs on a baking sheet for 18–20 minutes or until cooked through.
- In a small mixing bowl, combine Greek yogurt, cucumber, tomato, and garlic powder.
- Once cooked through, place meatballs in lettuce cups and top with yogurt mixture.
