Happy Fall Y’all!
I’m back because first, it’s time for more new recipes – yay – and secondly, it’s officially fall so time to celebrate with my two favorite pastimes: apple picking and cooking all the fall things.
Nod your head if you’ve already spent the last few weekends at your local apple orchard soaking in the last few days of summer while mentally preparing for sweater weather season?

If you’re like me, you couldn’t help yourself, picked a ton of apples and your kitchen now resembles a small orchard. Have no fear! I am here with two new recipes that won’t disappoint:
GOOEY APPLE NACHOS
APPLE PIE OVERNIGHT OATS

GOOEY APPLE NACHOS
(Serves 1)
Ingredients: Here’s What You Need

1 Medium apple, sliced

1 T. Almond butter
-
1 T. Mini chocolate chips

1 T. Peanuts, chopped (optional)
Recipe: Follow These Steps

Slice apples into wedges and plate.

Drizzle almond butter over sliced apples and sprinkle with chocolate chips and peanuts.

Microwave for 15-20 seconds to melt the chocolate a bit, if you prefer.
APPLE PIE OVERNIGHT OATS
(Serves 1)
Ingredients: Here’s What You Need

½ C. Oats
-
½ C. Unsweetened almond milk
-
¼-½ C. Plain Greek yogurt
-
3 tsp. Maple syrup
-
½ tsp. Vanilla
-
½ tsp. Cinnamon
-
1 Medium apple, peeled and diced (about ½ cup)
-
1 T. Walnuts, chopped (optional)
-
1 tsp. Almond butter
Recipe: Follow These Steps

Peel and dice the apple.

In a microwave-safe dish, add diced apples, cinnamon and 1 tsp of maple syrup.

Microwave for 60 seconds and allow to cool.

In a mason jar, add oats, almond milk, Greek yogurt, vanilla and remaining maple syrup. Mix well.

Top with diced apple mixture, chopped walnuts and drizzle almond butter on top.

Close jar and store in fridge overnight.

Before eating, mix well and add additional almond milk if needed.
