Egg Roll Soup

(makes 4 servings)

  • 1 pound ground turkey or chicken

  • 1 tablespoon sesame oil

  • 1 white onion, diced

  • 1 cup carrots, shredded

  • 4 cups cabbage, thinly sliced

  • 2 heads bok choy

  • 6 cups chicken broth

  • 1 tablespoon lower-sodium soy sauce

  • 1 teaspoon garlic powder

  • 1-2 teaspoons ginger, freshly grated

  • 2 tablespoon green onion, chopped

  1. In a large skillet, brown ground chicken or turkey. Drain and set aside.

  2. Add sesame oil to the skillet and add diced onion. Cook for 4-5 minutes.

  3. Add carrots, cabbage, and bok choy and cook until slightly tender.

  4. In a large crock pot, add broth, cooked turkey or chicken, soy sauce, garlic powder, and ginger. Stir well to combine. Add cooked veggies and stir again.

  5. Cook soup on low for 2-3 hours or, until veggies have softened. Season to taste and top with green onion to serve.
