Eggplant Fries + Yogurt Dip

(makes 4 servings)

  • 1 large eggplant, cut into sticks
  • 1-2 tablespoons olive oil
  • salt, to taste
  • 1 cup Greek yogurt
  • juice of 1/2 lemon
  • 1 tablespoon fresh dill, chopped
  1. Preheat oven to 425 degrees.
  2. Toss eggplant sticks with olive oil and salt.
  3. Spread sticks on a baking sheet and roast for 25-30 minutes, until golden.
  4. In a small bowl, combine yogurt, lemon, and dill.
  5. Serve the eggplant fries with a side of yogurt dip.
