(makes 4 servings)
Salad
1 1/2 cups shelled edamame
1 large English cucumber, diced
1/4 cup thinly sliced red onion
2 tablespoons fresh parsley, chopped
1 tablespoon sesame seeds (optional crunch)
Dressing
- 1 tablespoon olive sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon honey
- 1 teaspoon low-sodium tamari or soy sauce
- pinch of salt
- Whisk together all dressing ingredients in a small bowl.
- Add edamame, cucumber, onion, and parsley to a large bowl.
- Pour dressing over top and toss well.
- Chill 15–30 minutes if you have time (flavor gets better).
- Sprinkle with sesame seeds before serving. Enjoy!
