(makes one serving)
- 1 cup shelled edamame (thawed from frozen or pre-cooked)
- 1/2 ripe avocado, diced
- 1/2 cup shredded carrots
- 1/2 cucumber, chopped
- 1/4 cup sauerkraut or kimchi (great for gut health!)
- 1 tablespoon tahini
- 1/2 lemon, juiced
- In a large bowl, combine edamame, avocado, carrots, cucumber and sauerkraut
- Drizzle with tahini and lemon juice
- Toss gently to combine
- Enjoy!
