Crustless Quiche
(makes 4 servings)
- 1 1/2 cups egg whites
- 4 whole eggs
- 1/2 cup milk of choice
- 2 cloves garlic, minced
- 1 tablespoon dried thyme
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 cups of favorite veggies (mushrooms, squash, bell peppers, etc.), thinly sliced
- 1/4 cup grated parmesan cheese
- Preheat oven to 350 degrees F. Spray a 9-inch pie pan with non-stick cooking spray.
- In a large skillet, cook desired vegetables until slightly softened for about 4-5 minutes. Place the cooked veggies into the prepared pie pan spacing them evenly.
- In a medium-sized mixing bowl, whisk eggs, milk, and seasonings. Mix well to combine. Pour the egg mixture into the pie pan and spread evenly.
