Crustless Quiche

Crustless Quiche (makes 4 servings)
  • 1 1/2 cups egg whites
  • 4 whole eggs
  • 1/2 cup milk of choice
  • 2 cloves garlic, minced
  • 1 tablespoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 cups of favorite veggies (mushrooms, squash, bell peppers, etc.), thinly sliced
  • 1/4 cup grated parmesan cheese
  1. Preheat oven to 350 degrees F. Spray a 9-inch pie pan with non-stick cooking spray.
  2. In a large skillet, cook desired vegetables until slightly softened for about 4-5 minutes. Place the cooked veggies into the prepared pie pan spacing them evenly.
  3. In a medium-sized mixing bowl, whisk eggs, milk, and seasonings. Mix well to combine. Pour the egg mixture into the pie pan and spread evenly.
