Creamy Tofu & Avocado Salad

(makes one serving)

  • 1/2 block (4 oz) firm tofu, cubed
  • 1/2 avocado, mashed
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 tablespoon hemp seeds
  • 1/4 cup cucumber, diced
  • 1/4 cup cherry tomatoes, halved
  • 1 tbsp chopped fresh basil or cilantro
  • salt & pepper to taste
  1. In a bowl, mash the avocado and mix with lemon juice, mustard, salt, and pepper.
  2. Add cubed tofu, cucumbers, tomatoes, and hemp seeds.
  3. Toss gently and top with fresh basil or cilantro.
  4. Enjoy as-is or serve in lettuce wraps!
