Cranberry Walnut Chicken Salad

  • 3 cups cooked shredded chicken breast
  • 3/4 cup plain Greek yogurt
  • 2 tablespoons mayo
  • 1/3 cup dried cranberries
  • 1/3 cup chopped walnuts
  • 2 celery stalks, diced
  • 1–2 green onions, sliced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • salt + pepper to taste
  1. Add Greek yogurt, mayo, Dijon, lemon juice, salt, and pepper to a large bowl.
  2. Mix until smooth.
  3. Fold in chicken, cranberries, walnuts, celery, and onions.
  4. Chill for at least 30 minutes before serving.

This recipe pairs well with:

  • Toasted sourdough
  • Lettuce wraps
  • Leafy greens
  • Wrap – grilled or plain
