Copycat Chocolate Sea Salt RX Bars

(makes 6 servings)

  • 1 cup Medjool dates (pitted — about 8 large)
  • 1 cup raw almonds or cashews
  • 2–3 scoops of chocolate protein powder
  • 2 egg whites (or 4 tbsp liquid egg whites)
  • 1 tablespoon cocoa powder and a pinch of sea salt
  1. Soak dates in warm water for 5 minutes to soften and then drain well.
  2. Add nuts to a food processor and pulse until coarsely ground.
  3. Add dates, protein powder, egg whites, and optional spices.
  4. Pulse until a thick, sticky dough forms. If too dry, add 1–2 tsp water; if too wet, add a bit more protein powder.
  5. Press mixture evenly into a parchment-lined loaf pan or 8×8 dish (about ¾-inch thick).
  6. Chill in the fridge or freezer for at least 30 minutes, then cut into 6 bars.
  7. Keep refrigerated up to 1 week or freeze for long-term storage.
