CAJUN RED BEANS + RICE
(Serves 6)
Ingredients: Here’s What You Need

1 lb. Smoked turkey kielbasa, sliced (omit for a vegetarian option)

1 lb. Dry red kidney beans

1 Medium white onion, diced

2 Stalks of celery, diced

2 Bell peppers, diced
-
2 14 Ounce cans of fire roasted tomatoes

Enough water to cover beans in crock pot

Salt, pepper, homemade creole seasoning

Brown Rice
Homemade Creole Seasoning:

2 T. Onion Powder

2 T. Garlic Powder
-
2 T. Oregano
-
2 T. Basil
-
1 T. Thyme

1 T. Black Pepper

1 T. Cayenne Pepper

5 T. Paprika

3 T. Salt
Recipe: Follow These Steps
In a large crockpot, add kielbasa (if using), dry red beans, diced tomatoes and enough water to just cover the beans. Add desired seasonings. Cook on low for 6-8 hours or, until beans are soft. Serve over brown rice.
