Coconut Banana Granola (makes 4 servings)

1 very ripe banana

1 cup oats

2 tablespoons shredded coconut

2 tablespoons crushed almonds

2 tablespoons coconut oil, melted
Recipe: Follow These Steps:

Preheat oven to 350 degrees.

In a large mixing bowl, mash the banana with the back of a fork until pudding consistency. Mix in melted coconut oil.

To the banana mixture, add the oats and mix well to combine. Add almonds and coconut.

On a parchment-lined cookie sheet, spread the granola mixture evenly.

Bake for 28-30 minutes. With a spatula, lightly toss granola halfway through baking. Granola should be slightly browned before removing.

Allow to cool completely and break into large chunks.
