Coconut Banana Granola


Coconut Banana Granola (makes 4 servings)

Ingredients: Here’s What You Need

  • 1 very ripe banana

  • 1 cup oats

  • 2 tablespoons shredded coconut

  • 2 tablespoons crushed almonds

  • 2 tablespoons coconut oil, melted

Recipe: Follow These Steps:

  1. Preheat oven to 350 degrees.

  2. In a large mixing bowl, mash the banana with the back of a fork until pudding consistency. Mix in melted coconut oil.

  3. To the banana mixture, add the oats and mix well to combine. Add almonds and coconut.

  4. On a parchment-lined cookie sheet, spread the granola mixture evenly.

  5. Bake for 28-30 minutes. With a spatula, lightly toss granola halfway through baking. Granola should be slightly browned before removing.

  6. Allow to cool completely and break into large chunks.
