(makes 4 servings)
- 4 4-ounce salmon fillets
- 2 large limes, sliced
- 2 teaspoons chili powder
- 1 teaspoon Cajun seasoning
- 1 teaspoon garlic powder
- 1 teaspoon salt
- Preheat oven to 400 degrees F. Cut 4 pieces of parchment paper large enough to create a “pouch” for each filet and place them on a large baking sheet
- Place several lime slices in the middle of each piece of parchment paper in a single layer. Place the filet (scales side down) on top of the lime slices.
- In a small mixing bowl, combine all seasonings and mix well. Season each filet with the spice mixture and place 3-4 lime slices on top.
