Chili Lime Salmon

Chili Lime Salmon

(makes 4 servings)

  • 4 4-ounce salmon fillets
  • 2 large limes, sliced
  • 2 teaspoons chili powder
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  1. Preheat oven to 400 degrees F. Cut 4 pieces of parchment paper large enough to create a “pouch” for each filet and place them on a large baking sheet
  2. Place several lime slices in the middle of each piece of parchment paper in a single layer. Place the filet (scales side down) on top of the lime slices.
  3. In a small mixing bowl, combine all seasonings and mix well. Season each filet with the spice mixture and place 3-4 lime slices on top.
  4. Fold the parchment paper over the salmon and roll the edges to create a “pouch”. Place the baking sheet in the oven and bake for 15 minutes.
  5. Enjoy!
