Crock-Pot Taco Chicken: start by cooking the chicken for your nachos

1 pound boneless, skinless chicken breast

1 can diced tomatoes, drained

1 can diced green chiles

homemade taco seasoning (see recipe below)

2 teaspoons chili powder

2 teaspoons cumin

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon salt
-
½ teaspoon black pepper

Add all ingredients to Crock-Pot and mix well.

Cook on low for 6-8 hours or high for 4-6 hours until chicken is cooked through.

Shred chicken with a fork when done.

Whole-grain tortilla chips
