Game Day Loaded Nachos

It’s Coach Amie back with Forking Made Easy: a collection of recipes to make eating healthy taste good. This week’s menu features Game Day Loaded Nachos – full recipe is posted below:

Crock-Pot Taco Chicken: start by cooking the chicken for your nachos

  • 1 pound boneless, skinless chicken breast

  • 1 can diced tomatoes, drained

  • 1 can diced green chiles

  • homemade taco seasoning (see recipe below)

  • 2 teaspoons chili powder

  • 2 teaspoons cumin

  • 1 teaspoon garlic powder

  • 1 teaspoon smoked paprika

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  1. Add all ingredients to Crock-Pot and mix well.

  2. Cook on low for 6-8 hours or high for 4-6 hours until chicken is cooked through.

  3. Shred chicken with a fork when done.

Assembly:

  • Whole-grain tortilla chips

  • Toppings – pick your faves, some examples::

  • Bell peppers

  • Red onion

  • Banana peppers

  • Salsa

  • Cheese

  • Black beans

  1. Place tortilla chips on a plate or, a large sheet pan if preparing for a crowd.

  2. Top tortilla chips with taco chicken and toppings of your choice.
