Today’s menu: Chicken Fajita Foil Packs

As you head into the holiday weekend, these make for the perfect grill and chill evening with who knows – maybe a side of margaritas!?

CHICKEN FAJITA FOIL PACKS

(Serves 4)

Ingredients: Here’s What You Need

  • 1 lb. Boneless, skinless chicken breast, cut into thin strips

  • 3 Medium bell peppers, thinly sliced

  • 1 Red onion, thinly sliced

  • Juice from 1 lime

  • 2 T. Olive oil

  • Fajita seasoning

Fajita Seasoning

  • 2 t. Chili powder

  • 2 t. Cumin

  • 1 t. Garlic powder

  • 1 t. Smoked paprika

  • 1 t. Sea salt

  • ½ t. Black pepper, fresh ground

  • ⅛ t. Cayenne pepper

Recipe: Follow These Steps

  • Preheat oven to 425 degrees.

  • Combine chicken, peppers, onion, lime juice and olive oil. Stir well and combine.

  • Add fajita seasoning to chicken mixture and stir until well coated.

  • Using 4 18×12 inch sheets of aluminum foil begin arranging chicken packs. Lightly spray each sheet to prevent sticking. Add ¼ of the chicken mixture to each foil sheet, fold foil over and pinch to seal. Place foil packs on a baking sheet. Bake at 425 for 25-30 minutes rotating once halfway through.
