Carrot Cake Stuffed Dates

(makes 4 servings)

  • 8 Medjool dates, pitted
  • 1/2 cup light cream cheese
  • 2 tablespoons finely shredded carrot
  • 1 tablespoon maple syrup
  • 1 teaspoon cinnamon
  • 2 tablespoons chopped walnuts
  1. In a small mixing bowl, combine cream cheese, carrot, maple syrup, and cinnamon.
  2. Evenly divide the mixture and place it inside the dates.
  3. Top off with chopped walnuts.
  4. Enjoy!
