Buffalo Chicken Stuffed Sweet Potato

(makes one serving)

  • 1 medium baked sweet potato
  • 4–5 ounces cooked shredded chicken breast
  • 1–2 tablespoons Buffalo sauce
  • 1/4 avocado, diced or smashed
  • 2–3 tablespoons pickled red onions
  1. Split the sweet potato lengthwise and mash lightly with a fork
  2. In a small bowl, toss chicken with buffalo sauce and then add to the open sweet potato
  3. Top with avocado, pickled red onions, and additional buffalo sauce
