Buffalo Chicken Meatballs

Buffalo Chicken Meatballs

(makes 6 servings/approx. 24 meatballs)

  • 1.5 pounds ground chicken

  • 1/4 cup egg whites

  • 1/2 cup crumbled blue cheese

  • 1/2 cup scallions, diced fine

  • 1/2 cup Buffalo sauce (primal Kitchen is my personal fav!)

  1. Preheat oven to 400 degrees. Line a large baking sheet with parchment paper.

  2. In a large bowl, combine chicken, egg whites, blue cheese, scallions, and 3/4 of the Buffalo sauce. Form the mixture into 1-inch balls and place them on the lined baking sheet. Bake for 15-20 minutes or, until cooked through.

  3. Remove meatballs from the baking sheet and toss with the remaining Buffalo sauce.

  4. Enjoy!
