Blueberry + Lemon Oat Bars

Blueberry + Lemon Oat Bars

(makes four servings)

  • 1 1/3 cups rolled oats

  • 1 teaspoon baking powder

  • 1/4 cup maple syrup

  • 1/2 cup almond milk

  • 1/4 cup lemon juice, fresh-squeezed

  • zest of 1 lemon

  • 4 eggs

  • 2 cups fresh blueberries

  1. Preheat oven to 350 degrees. Lightly spray an 8 x 8 baking pan with cooking spray.

  2. Combine oats, baking powder, maple syrup, almond milk, lemon juice, and egg in a blender. Pulse until combined and it resembles a batter-like consistency.

  3. Pour batter into the prepared pan. Top with fresh blueberries (gently push into the top) and lemon zest.

  4. Bake for 20-25 minutes. Allow to cool before slicing into 4 pieces.
