Blueberry Cottage Cheese Ice Cream

(makes 2-3 servings)

  • 2 cups cottage cheese ( recommend Good Culture!)
  • 2 cups fresh blueberries
  • 1/4 cup maple syrup
  1. Add cottage cheese, 1 cup of blueberries, and maple syrup to a food processor or blender and pulse until smooth.
  2. Fold in the remaining blueberries and mix well to combine.
  3. Pour the mixture into a freezer-safe container. Freeze for several hours until hard enough to scoop.
  4. Enjoy!
