Black Bean Taquitos
(makes 6-8 taquitos)

1 can black beans, drained and rinsed

1/4 cup salsa

1 Tablespoon taco seasoning

Whole-wheat or whole-grain tortillas

Olive oil, for brushing

Preheat oven or air-fryer to 375 degrees.

To a blender or food processor, add black beans, salsa, and taco seasoning. Pulse until combined.

Place even amounts of the bean mixture onto each tortilla and roll up tightly. Place filled tortillas onto a baking sheet or into the air fryer basket. Brush the top of each tortilla with olive oil.

Bake or air fry for 6-8 minutes or, until the tortillas crisp on top.

Serve with additional salsa.
