BBQ Stuffed Sweet Potatoes

It’s Coach Amie back with Forking Made Easy: a collection of recipes to make eating healthy taste good. This week’s menu features BBQ Stuffed Sweet Potato – full recipe is posted below:

BBQ Stuffed Sweet Potato

(makes 1 serving)

  • 1/2 large steamed sweet potato, sliced lengthwise

  • 3 ounces shredded rotisserie chicken

  • 2 Tablespoons BBQ sauce (low-sugar brands such as Primal Kitchen)

  1. In a small mixing bowl, combine chicken and 1 Tablespoon of BBQ sauce until mixed well.

  2. Top sweet potato with the BBQ chicken and drizzle the remainder of the BBQ sauce on top.

  3. Serve with a side of steamed or roasted veggies for a complete meal.
