(makes 8 servings)
- 4 medium very ripe bananas
- 2 cups liquid egg whites
- 1/2 cup unsweetened vanilla almond milk
- 2 teaspoons vanilla
- 3 cups old-fashioned or rolled oats
- 1 cup vanilla whey protein powder
- 2 teaspoons baking powder
- 1 teaspoon sea salt
- 2 teaspoons cinnamon
- Preheat oven to 350 degrees and spray a 9×13 baking dish with non-stick cooking spray.
- In a large mixing bowl, mash bananas until they are no longer lumpy. Add egg whites, almond milk, and vanilla. Mix well to combine.
- In a separate large mixing bowl, combine oats, protein powder, baking powder, sea salt, and cinnamon. Mix well to combine.
- Add the dry ingredients to the wet ingredients and stir well to combine until a batter-like consistency.
- Pour the batter into the prepared baking dish and bake for 30-35 minutes or, until the top is a golden brown. Allow to cool and then cut into 8 bars.
