Bacon + Egg Breakfast Cups

Bacon + Egg Breakfast Cups (makes 6 servings)
  • 6 large eggs
  • 12 slices Canadian bacon or, lean ham
  • 1/2 cup spinach, chopped
  • 1/2 cup cherry tomatoes, sliced
  • sea salt and pepper, to taste
  1. Preheat oven to 350 degrees and spray a large 6-cup muffin tin with non-stick cooking spray.
  2. Place 2 slices of Canadian bacon or ham in each tin and shape them into cups. Crack one egg in each cup and top with spinach and tomatoes. Season as desired with salt and pepper.
  3. Bake for 18-20 minutes, or until the center of the eggs are firm and set. 
  4. Enjoy!
