Apple Farro Salad

(makes 4 servings) Salad
  • 2 cups cooked farro
  • 1 cup apple, diced
  • 1 oz. crumbled feta or goat cheese
  • 1/4 cup celery, chopped
  • 1/4 cup dried cranberries
  • 2 cups of salad greens such as arugula
Vinaigrette
  • 1 tablespoon olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey or maple syrup
  • 1/8 teaspoon salt
  • 1/8 teaspoon garlic powder
  1. In a large mixing bowl, combine all salad ingredients (minus the greens) and mix well to combine
  2. In a small mixing bowl, whisk all vinaigrette ingredients together.
  3. When ready to serve, add vinaigrette to the salad mixing bowl and toss to combine. Serve on top of desired greens
  4. Enjoy!
