Almond Butter and Apricot Bars

(makes 12 servings)

  • 1 cup natural almond butter (the creamier the better)
  • 1 cup honey
  • 1 cup old-fashioned oats
  • 1 cup diced apricots
  • 1 cup chopped almonds
  • 3 scoops vanilla protein powder
  • 1 teaspoon cinnamon
  1. In a medium pot, heat almond butter and honey until texture is runny
  2. In a large mixing bowl, combine the honey and almond butter mixture with the remaining ingredients and mix well to combine.
  3. Place mixture into a parchment-lined 9×13 pan and press evenly.
  4. Refrigerate for at least 45 minutes before cutting into bars.
  5. Store in a sealed container in the refrigerator or freezer.
