Air Fryer Oatmeal Breakfast Cookie

It’s Coach Amie back with Forking Made Easy: a collection of easy-to-follow recipes to make eating healthy taste good. This week’s menu features Air Fryer Oatmeal Breakfast Cookie.

Air Fryer Oatmeal Breakfast Cookie

(makes 1-2 servings)

  • 1/2 cup oats

  • 1 small very ripe banana

  • 1 tablespoon coconut oil

  • 1 tablespoon almond milk

  • sprinkle of cinnamon

  • Additional add-ins such as chopped nuts, seeds, or dried fruit

  1. In a mixing bowl, combine all ingredients and mix well.

  2. Form the mixture into a ball and flatten with the back of a spoon to form a large cookie.

  3. Preheat the air fryer to 350 degrees.

  4. Place the cookie in the air fryer basket (make sure it is either placed in a liner or a well-oiled basket) and cook for 6-8 minutes.

  5. Allow to cool for several minutes and enjoy!
