Air-Fried Latkes

(makes 10 latkes)
  • 2 medium russet or gold potatoes, grated (about 2 cups)
  • 1 small carrot or zucchini, grated
  • 1/2 small onion, grated or finely minced
  • 2 eggs
  • 2 tablespoons oat flour or almond flour (to bind)
  • salt and pepper, to taste
  1. Grate potatoes, carrot, and onion.
  2. Place in a clean towel and squeeze out as much moisture as possible — this is key for crispness.
  3. In a large bowl, combine grated veggies, eggs, flour, and seasonings. Stir until evenly coated.
  4. Form into 10 small patties (about 2 tbsp each) and flatten slightly.
  5. Lightly spray the air-fryer basket with cooking oil.
  6. Cook at 400°F (200°C) for 10–12 minutes, flipping halfway.
