Apple and Farro Salad

It’s Coach Amie back with Forking Made Easy: a collection of easy-to-follow recipes to make eating healthy taste good. This week’s menu features:

Apple and Farro Salad

(Makes 4 servings)

  • 1 cup cooked farro

  • 1 large apple, cored and diced

  • 6 cups arugula

  • 1/4 cup walnuts or almonds, chopped

  • 1/4 cup dried cranberries

  • 2 ounces of crumbled goat cheese

    Vinaigrette

  • 2 tablespoons lemon juice, fresh-squeezed

  • 1 teaspoon Dijon mustard

  • 1 teaspoon maple syrup

  • 1/4 cup olive oil

  1. In a small mixing bowl, combine all ingredients for the vinaigrette and set aside.

  2. In a large bowl, add farro, apple, arugula, nuts, cranberries, and goat cheese. Toss well to combine.

  3. Once combined, pour the vinaigrette over the salad and toss again.

  4. Enjoy!
