It’s Coach Amie back with Forking Made Easy – this week’s recipe:
No-Bake Breakfast Cookies
Ingredients: Here’s What You Need
(Makes 10-12 cookies)
-
1 cup creamy nut butter of choice (almond, peanut, cashew, etc.)
-
1/4-1/3 cup honey
-
1 teaspoon vanilla
-
3 tablespoons chia seeds
-
1 cup old-fashioned oats
-
Optional mix-ins such as chopped nuts, dried fruit, seeds, protein powder, etc.
Recipe: Follow these steps
-
Place nut butter, honey, and vanilla in a microwave-safe bowl and microwave for 20 seconds. If needed, add a bit more honey to ensure a very creamy consistency. Stir until well combined.
-
Pour mixture into a large mixing bowl and combine with remaining ingredients and any additional mix-ins you choose. Once mixed, this should form a dough-like texture. If the mixture is too dry, add a bit more honey. If the mixture is too runny, add a bit more oats to achieve the desired consistency.
-
Roll the mixture into 10-12 balls and place on a baking sheet lined with parchment paper. Slightly flatten balls with the bottom of a glass. Place cookies into the fridge for 3-4 hours and allow them to set.
-
Store in a sealed container in the fridge for several days.
